So, we cook locally and act globally—in our stewardship and in our kitchen, drawing inspiration from many different cuisines. We use local produce during peak season to lessen the environmental impact. From our brunch catering and our dinner menus to our full-service catering offerings, you’ll see signs of local farms, artisan suppliers, and Colorado food distributors. Preservatives, chemicals, and trans fats have no place in our cooking, and we make our own sausages, breads, pastries, cakes, cookies, crackers, dressing, sauces, and butter fresh, from scratch.
